Fresh Charolais beef from the Viande de Bresse abattoir, minced to order. The chicken is free-range chicken from the Ain.
The sauces, and the fries, hand-cut and cooked in beef fat. The buns are made to order by Matt the Baker, a baker in Viriat. The cheeses are PDO (AOP): Comté, Bleu de Bresse, Reblochon, Morbier.
